Ingredients:

3-4 tablespoons extra virgin olive oil

3-4 zucchini or yellow squash, sliced

1 large onion, sliced

2-3 cloves garlic, slivered

1 long green chili, chopped

2 ears fresh corn removed from the cob (or 1 can whole kernel corn)

1 cup grated Cheddar cheese
Preheat oven to 400 degrees. In heavy bottomed pan, heat oil and sauté
zucchini, onion, garlic, green chili, and corn several minutes to start
the cooking process and to blend the flavors. (Or simply place
vegetables and oil into a microwave safe casserole, cover loosely with
waxed paper, and microwave on high about 5 minutes.) Put in buttered 1
quart baking dish and stir in the cheese. Bake 20 minutes. |
