Ingredients:
- 1 head cauliflower
- 2 tablespoons butter or olive oil
- 2 tablespoons flour
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon ground pepper
- 1/2 teaspoon dry mustard powder
- 1 cup milk
- 1/4 cup grated cheddar or Emmenthal cheese
- paprika
Wash and trim the cauliflower, leaving it as a whole head. Place in
batter bowl or any other microwave safe bowl it will fit into easily,
stem side up. Sprinkle with 1 tablespoon water. Cover. Microwave on
high, using 5 minutes per pound as a good guide for timing. In meantime,
in a batter bowl combine butter or oil, flour, salt, pepper, and
mustard. Microwave on high 30 seconds. Whisk in milk. Microwave on high
1 minute. Whisk. Microwave another 1-2 minutes, or until thickened,
adding the cheese at the last 30 seconds or so and whisk until melted.
Arrange cooked cauliflower head on platter, and drizzle with the sauce.
Sprinkle with paprika. |
