Ingredients:

2 eggs

1 cup freshly scraped corn from the cob

6 tablespoons flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon nutmeg

1/4 teaspoon freshly ground white peppercorns

3 tablespoons butter or oil
In batter bowl whisk eggs well. Stir in corn, flour, baking powder,
salt, nutmeg and pepper. In heavy bottomed skillet or sauté pan, heat
butter or oil. Drop mixture by 1 tablespoon into hot pan. When brown,
turn and cook second side. Serve with maple syrup. |
