Ingredients:

2 cucumbers, peeled, halved, and seeded

juice of 1 lime

1 1/2 teaspoons sugar

1/4 cup fish sauce

1/2 small red onion, thinly sliced lengthwise

1 small fresh red chili pepper, thinly sliced

1 small green chili pepper, thinly sliced

2 Roma tomatoes, thinly sliced

fresh whole chili peppers and coriander sprigs for garnish
Cut cucumber halves into 2 inch long sections, then cut each section
into 1/4 inch thick strips, or thick matchsticks.
Place in a bowl, add
remaining ingredients and toss. Garnish and serve. |
