Ingredients:
- 1 large
eggplant, peeled and cubed
- 2
tablespoons water
- 2 eggs
- 1/4 cup
chopped onion
- 2 cups
fresh bread crumbs
- 1/2
teaspoon fine sea salt
- 1/4
teaspoon pepper
- 1/4
teaspoon oregano
- 1/4
teaspoon paprika
- 1 cup
shredded Cheddar cheese
- 1/2 cup
salsa
Microwave
eggplant and water, covered, on High 9
minutes. Drain and mash eggplant. Combine
with remaining ingredients. Pour into ring
mold. Microwave on High 7-9 minutes, or
until set. Garnish with more cheese if
desired. Or, preheat oven to 350 degrees.
Thoroughly butter the ring mold. Combine as
directed and bake 25-30 minutes.
