Ingredients:

left-over cooked vegetables

cooked black beans or other beans, drained

1/2 cup cheddar or gouda cheese, shredded (can be optional)

flour tortillas

lettuce and cilantro
Place flour tortilla on plate. Add cheese. Microwave on High 30 seconds
to melt cheese. Heat desired vegetables or beans in microwave for 1-2
minutes. Add hot vegetables, lettuce and cilantro to tortilla. Roll up
and enjoy!
