Ingredients:
Green as Money Salad
freshly washed and dried salad greens
1-2 oranges, peeled and sliced
1 onion, thinly sliced
2 tablespoons Balsamic vinegar
2 tablespoons orange juice
1/2 teaspoon sugar
1/3 cup extra-virgin olive oil
pinch of sea salt
dash of pepper
Arrange greens on plates or in a salad bowl. Toss in the sliced oranges
and onions. In a small cup, whisk together the salad ingredients and
pour over the greens. Garnish with more citrus slices and grated zest.
Also wonderful with a snipping of fresh mint leaves.
