Ingredients:
Green Beans with Toasted Almonds
1-2 pounds young green beans, stemmed but with the tender green tip
intact
1/2 cup slivered almonds
1/4 cup extra-virgin olive oil
2 tablespoons vinegar
salt and pepper to your taste
Blanch the green beans in a large pot of rapidly boiling water for 3-5
minutes, just until tender. When they are cooked, quickly remove from
water and rinse in cold water to stop the cooking. To toast the almonds,
microwave in glass bowl for 1 - 2 minutes, just until they start to turn
brown. Stir and set aside. Careful, these will be hot. Whisk together
the oil, vinegar, salt and pepper. Toss with the green beans and
sprinkle the almonds on top. Serve warm or at room temperature.
