Ingredients:
- carrots,
fresh as you can get (best to buy with
green tops on)
- 2-4
tablespoons butter
- juice of
1/2 lemon
- lemon
zest of 1 lemon
- 2
tablespoons fresh parsley, snipped
Slice
carrots on diagonal and place in microwave
saucepan. Calculate cooking time, using 5-6
minutes per pound as a guide, or use your
automatic sensor, if your oven has one.
Cover. Microwave on High. Add butter, juice,
zest, and parsley. Serve hot or room
temperature. |
