Marinated
Broccoli and Yam Salad |
Ingredients:
1 large yam
1 bunch broccoli
1/3 cup coarsely chopped walnuts
1/3 cup olive oil
2 cloves garlic, minced
3 tablespoons lemon juice
2 tablespoons raspberry vinegar
2 tablespoons honey
1 tablespoon brown sugar
Microwave the yam wrapped in waxed paper, on
high for 5 minutes. Test for doneness. Allow
to stand, covered, while you microwave the
broccoli florets, covered, on high for 5
minutes per pound. Whisk together the
dressing ingredients and toss everything
together with the walnuts. Chill and serve. |
