Salad |
Ingredients:
1 head butter lettuce
1 head red lettuce
1 head spinach
1 egg, coddled in hot water 3 minutes
1/4 teaspoon salt
1 teaspoon dry mustard
2 tablespoons fresh chives
2 tablespoons fresh parsley
1 1/2 teaspoons tarragon
juice of 1 lemon or lime
1/2 cup salad oil
1 cup sour cream or yogurt
1/8 teaspoon Zip
1/8 teaspoon pepper
1 1/2 cups small, cooked shrimp
Wash and spin the lettuce dry, refrigerate.
In processor with steel chopping blade,
process the egg with the lemon juice, adding
the herbs, salt, and mustard. Slowly pour in
the oil in a steady steam and process until
you have a creamy dressing. Blend in the
sour cream, Zip, and pepper. Fold in the
shrimp, and when ready to serve, toss with
the torn lettuce pieces. |
