Ingredients:
Pates Aux Herbes
large pinch of sea salt
4-5 oz. mixed fresh herbs and salad greens
3 cups all-purpose flour
2 eggs
3-4 tablespoons warm water
1 tablespoon olive oil
Parmesan cheese and grater, unsalted butter, and pepper mill for serving
In food processor with steel chopping blade in place, chop herbs and
salt to form a paste. Add flour, and with motor running, add the eggs,
warm water to form a soft but manageable dough. Process to knead the
dough about 30 seconds. Roll out, preferable using a pasta roller, to
about 1/8 inch thick. Cut into strips about 1 1/2 inches wide and cut
across strips into squares. Bring a large pot of water to a boil, add
salt and a little oil, and when the water returns to a full boil, add
the pasta squares and cook gently until tender, about 4-6 minutes. Drain
and serve in warmed soup plates and offer cheese, butter, and pepper at
the table.
