Ingredients:
Plank Roasted New Potatoes with Dill
Recipe from the Plank Roasting Cookbook from Chinook Planks.
3 tablespoons butter or olive oil
4 tablespoons fresh dill, chopped
12 small new potatoes, scrubbed and cut into half
sea salt
freshly ground pepper
Brush cooking oil on wooden plank. Preheat plank in oven to 350 degrees
for at least 15 minutes. Melt butter 30 seconds in batter bowl in
microwave. Toss in the dill and the potato halves and stir to coat. Pour
the herbed potatoes into the oval of the hot preheated plank. Season
with salt and pepper. Roast for 40-45 minutes or until potatoes are
tender and browned at the edges.
