Ingredients:
2 tablespoons butter
2 tablespoons olive oil
6 cloves garlic, minced
4 large red potatoes, sliced
4 large onions, sliced
1/2 teaspoon, or more, fine sea salt
1/2 teaspoon freshly ground pepper
1-2 sausages, cut into pieces
1 cup shredded Cheddar cheese
Preheat a 10 inch Dutch oven, including lid. Combine butter, oil, and
garlic in Dutch oven. Place a layer of sliced potatoes in bottom
followed by a layer of onions, season with salt and pepper, and repeat
layers again. Tuck the sausages in and around the potatoes. Set
Dutch oven over hot coals and cover with lid, add more coals to the top,
and bake 1 hour. Sprinkle cheese over potatoes and onions. Cover, add
hot coals to top but not under the Dutch oven, and bake 30 minutes more,
or until potatoes are tender. If not using a campfire, bake, covered, in
the oven at 375 degrees for about 1 1/2 hours.
