Ingredients:

Potatoes Anna

In Civil War days, women packed potatoes in barrels of brine and sent them to prison camps to save lives of the undernourished prisoners. Potatoes contain lots of Vitamin C.

2 tablespoons butter
3-4 Yukon Gold or actually any variety will work
sea salt
freshly ground peppercorns
more butter for dotting between layers

In a heavy bottomed skillet, melt the 2 tablespoons butter. Arrange thinly sliced raw potatoes in 2-4 layers. Sprinkle each layer with salt and pepper and dot generously with butter. Cover. Cook gently 15 minutes on medium low to steam them but not to burn onto the bottom. Try not to peek as you need the steam to cook them. After 15 minutes, uncover and cook until tender and crispy brown on the bottom and sides. Invert onto a serving platter.
