Ingredients:
Radicchio Tempura
vegetable oil
3 cups flour
2 3/4 cups water or beer
salt and pepper to taste
3 heads treviso
coarse sea salt
Heat 3 inches vegetable oil in a medium deep heavy bottomed pot to about
375 degrees on a candy thermometer. In batter bowl, whisk flour, beer,
salt and pepper until smooth. Quarter the treviso lengthwise. Working
with a few pieces at a time, dip into batter and then deep fry until
crisp and golden, about 1 1/2 minutes per side. Place on paper towels to
drain. Sprinkle with coarse sea salt.
