Ingredients:
Rice Stick Noodles
1/3 pound rice stick noodles
cold water
5-6 Brussel sprouts
1 pound raw shrimp
2 tablespoons peanut or olive oil
1-2 tablespoons rice wine vinegar
1/2 teaspoon salt
1/2 teaspoon sugar
1 tablespoon soy sauce
1/3 to 1/2 cup vegetable or chicken broth
In a large bowl, cover rice stick noodles with water and soak for 5
minutes. Drain and reserve. Wash and prepare sprouts, cutting into
slices. Clean shrimp. Heat oil in wok until a light haze appears,
quickly add the sprouts and cook and stir for several minutes. Dump onto
a platter. Quickly add the shrimp, using more oil if needed. Cook until
they turn pink. Add the sprouts back to the pan, along with remaining
ingredients and noodles. Heat and serve.
