Ingredients:
Roasted Baby Potato Salad
10-12 baby potatoes
olive oil
sea salt
white pepper
basil leaves
sliced fresh mozzarella cheese
Preheat oven to 450 degrees. Scrub the potatoes but do not peel. Arrange
in a roasting pan. Sprinkle with olive oil, salt, and pepper. Turn heat
to 400 degrees and bake for about 20-30 minutes, or until potatoes are
tender and skins are turning brown. Cool. With a sharp knife, slice and
arrange on a plate with basil leaves and mozzarella. Fresh sliced
tomatoes are good, also.
