Ingredients:
Roasted Eggplant Slices
1 eggplant
soft butter or extra virgin olive oil
salt
pepper
paprika
extra goodies: Roasted Garlic and Grilled Tomatoes to put on top of the
finished eggplant slices
Preheat oven to 400 degrees. Cut the eggplant into slices about 1/2 inch
thick. Spread both sides with butter or drizzle with olive oil. Season
with salt, pepper, and paprika. Place on a baking sheet and bake 6
minutes. Turn slices. Bake another 5-6 minutes or until soft. Serve as
it, or squeeze roasted garlic cloves over each slice and top with a
grilled tomato slice.
