Roasted
Potatoes |
Ingredients:
3-4 or more potatoes
olive oil
sea salt
Fromage Blanc, if desired
Preheat oven to 375 degrees. Wash potatoes. Pierce the skins with a
fork. Brush or rub olive oil over each potato. Arrange on a cookie sheet
or or a roasting rack. Sprinkle with sea salt (coarse is good here).
Bake at least 40 minutes, and longer if the potatoes are larger.
Potatoes should be tender when pierced with a fork. Allow to stand about
10 minutes before serving. For a special treat, place potatoes on a
cedar plank and roast as above. Serve with Fromage Blanc or sour cream,
if desired.

| Fromage blanc
usually has the consistency of thick yogurt. It's expensive and hard to
find, but very tasty and relatively low in fat. It makes a great topping
for desserts. Substitutes: quark (very similar) OR yogurt cheese OR
buttermilk cheese OR blend equal parts cottage cheese and yogurt until
smooth OR cream cheese whipped with cream |
