Ingredients:
Roasted Whole Heads of Garlic
whole heads of garlic
olive oil
salt and pepper, as desired
Peel away some of the papery layers from the garlic heads, particularly
from down among the top cloves, taking care not to break off the cloves.
Slice off the top. Drizzle with olive oil, salt and pepper. Either wrap
in foil and place on the grill, away from the hottest coals for 1 hour,
or bake in a 350 degree oven for 50-60 minutes, covered. I like to use
the clay garlic roaster for this. Garlic is done when the cloves are
browned and mushy.
