Ingredients:
Somen Noodles Salad
Somen noodles, or thin spaghetti, cooked and drained
2 teaspoons sesame oil or other flavored oil
1/2 cup thinly sliced green onions
1/4 cup slivered water chestnuts
1/2 cup Thai peanut sauce, or Tommy Tang's Stir-Fry sauce
shredded lettuce
shredded cilantro
1/4 teaspoon sea salt
1/4 teaspoon freshly ground pepper
slivered radishes, if desired
Cook and drain the noodles, following package directions. Place in
serving bowl, and gently stir in the oil, green onions, water chestnuts,
peanut sauce, salt and pepper. Shred the lettuce and cilantro, and toss
in. Serve immediately, garnished with slivered radishes.
