Ingredients:
Southern Pickled Black-Eyed Peas
2 16 oz. cans black-eyed peas, drained
1 onion, thinly sliced
1/2 cup extra-virgin olive oil
1/4 cup wine vinegar
2 cloves garlic, mashed
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1 bay leaf
1/2 teaspoon pepper
Put peas in a serving casserole. Combine all other ingredients in s
saucepan, or a bowl. Either heat on the burner in the pan until boiling,
or microwave the ingredients in the bowl on high for 3 to 5 minutes.
Pour over the peas. Refrigerate for several hours, or overnight, to
enhance the flavors. Serves 8 lucky people on New Year's Day.
