Spinach Casserole

2 packages frozen spinach
1 can cream of potato soup
1 cup sour cream
salt and pepper to taste
1/2 cup shredded cheddar cheese, for top

Microwave spinach in boxes placed on plate, on High 9 minutes. Squeeze out liquid. Combine all ingredients and mix well. Put in 2 quart casserole dish. Microwave on High 5-7 minutes, until bubbly. Add cheddar cheese on top, and let stand 2-3 minutes to melt cheese.
