Ingredients:
Spinach Noodle Ring
1 (10 oz.) package frozen chopped spinach
1 (12 oz.) package medium noodles
1/2 cup butter
1 cup sour cream
3 eggs, well beaten
dash salt
dash nutmeg
Defrost spinach in the package in microwave oven 2 to 3 minutes, but do
not cook; squeeze out excess moisture. Cook noodles conventionally
according to package directions; drain well in a colander. In a large
bowl or casserole microwave butter, uncovered, on High 30 seconds. Mix
in thawed spinach, drained noodles and remaining ingredients. Pour
mixture into a 6 to 8 cup ring mold or plastic bundt dish or brioche
dish. Microwave, uncovered, on High 10 to 13 minutes, until set. Allow
to stand 8 to 10 minutes before unmolding to serve. Makes 6 to 8
servings.
