Ingredients:
Stir Fry Green Beans
substitute fresh asparagus if you wish
1 pound fresh green beans
1/4 cup water
2 tablespoons best quality soy sauce
1 tablespoon rice vinegar or saki
1 teaspoon brown sugar
dash or more of hot chili flakes or Chipotle pepper
freshly ground peppercorns
1 tablespoon olive oil
2-3 cloves garlic, slivered
1 knob (about 2 tablespoons) minced fresh ginger
Wash and trim off stem end of beans, leaving the tail intact. Cut beans
on the diagonal into 2-3 inch pieces and set aside. In bowl combine soy
sauce, vinegar, sugar, chili and pepper. Heat water in stir fry pan
until steaming, add the beans and quickly cover them. Cook exactly 3
minutes. Remove the lid and let any remaining water evaporate away,
adding the oil, garlic and ginger. Stir and cook about 2 minutes. Add
the reserved soy mixture and cook and stir several minutes. Serve.
