Ingredients:
Sweet Potato Orange Cups
2-3 medium sweet potatoes
3 large oranges
1/4 teaspoon ground coriander
1/4 teaspoon ground nutmeg
1 tablespoon butter
2 tablespoons sour cream or crème fraiche
1 tablespoon brown sugar
1/4 teaspoon fine sea salt
freshly ground peppercorns
1/4 cup dried cranberries
Peel and cut sweet potatoes into even sizes. Place in batter bowl.
Cover. Microwave on high, using 5 minutes
per pound of potatoes as a guide, about 5-6 minutes total.
Set aside to cool slightly. Cut each
orange in half crosswise, using a decorative slicer if available.
Squeeze out the pulp and juice, reserving about 2 tablespoons from each
orange. Scoop out the pulp to make the shells attractive.
Set shells
aside. Mash the potatoes with the spices, butter, cream, brown sugar,
salt and pepper adding the reserved orange juice.
Pile back into the shells. Spoon mixture into shells and arrange on a
microwave safe plate. Sprinkle with cranberries, tucking some down into
the mixture.
Microwave on high about 3 minutes, or until hot. Serve.
