Ingredients:
Sweet Potato Pistachio Pasta Sauce
1-2 sweet potatoes or yams
1 tablespoon butter
sea salt
freshly ground pepper
1/4 cup pistachio kernels, roasted and lightly salted
1-2 tablespoons extra-virgin olive oil
snipped fresh parsley
freshly grated Fontina
1 pound freshly cooked pasta of choice
Peel and cube potatoes. Place in "ugly" or "beautiful" pot. Add butter.
Cover. Microwave on high 3-4 minutes, or until potato chunks are tender.
Add salt, pepper, pistachios and toss over freshly cooked pasta. Toss in
olive oil, parsley and grated cheese. Serve.
