Ingredients:
Tuna Rice for Lettuce Rolls
1 cup cooked cold rice
1 cup best quality tuna, diced
1 cup sweet peas, cooked
1/4 cup extra virgin olive oil
2-3 tablespoons honey mustard (honey mustard pretzel dip)
snipped fresh parsley
salt and pepper to taste
washed and dried leafy lettuce leaves
washed and dried endive leaves
Combine rice, tuna, peas, oil, mustard, parsley and seasonings to taste.
Pack into a nice bowl with lid. Wash and spin dry the lettuce and pack
carefully.
Take along to picnic,
and when ready to serve, let each person spoon some of the mixture onto
a lettuce leaf, roll it up, and eat.
Also, dollop some into endive leaves
and serve.
