Ingredients:
Vegetable Relish for Fried Chicken
2 carrots
1 white potato
2-3 cloves garlic, slivered
1/2 cup watermelon rind pickles (or other sweet pickles)
Juice from the pickles, about 2 tablespoons
Scrub carrots and potatoes. Cut up into small dice. Place carrots,
potatoes and garlic in a microwave dish. Cover. Microwave on high 3-4
minutes, until tender but not over-done. Cool slightly. Cut pickles into
little pieces and add to vegetables along with the juice. This is great
as a condiment with fried foods.
