Ingredients:
Vegetables with Hummus
lettuce leaves, sliced tomatoes, radishes, celery boats, endive,
zucchini slivers, baby potatoes...
1 can garbanzo beans, drained slightly
1/4 cup tahini
1/2 teaspoon cumin
3-4 cloves garlic
juice of 1 lemon
1/4 teaspoon fine sea salt
1-2 tablespoons extra-virgin olive oil
cilantro leaves
Arrange an assortment of fresh, raw vegetables on a platter. In food
processor with steel chopping blade in place, place beans, tahini,
cumin, garlic, juice of the lemon, and sea salt. Whirl to blend
thoroughly. Add olive oil and blend well. Serve with vegetables,
garnished with snipped cilantro leaves.
