Ingredients:
Winter Squash Stir-Fry
- 2-3 tablespoons olive oil
- 1-2 teaspoons butter
- 1-3 kinds of winter squash, peeled,
and cut into chunks
- 1 onion, slivered
- 1-2 apples, cut into serving sized
pieces
- 2-3 green onions, slivered
- herbs as desired
- 2-3 tablespoons your favorite salsa
or chutney
Heat oil and butter in a wok or
skillet. Add squash chunks and stir fry about 5 minutes, or until the
squash is beginning to become tender.
Add the onion and apples slices and
continue to stir fry until tender. Add the onions and seasonings.
A drizzle of salsa or other nicely
flavored sauce is a nice addition to this dish, as well.
