Ingredients:
Zucchini and Roasted Onion Tart
3 sweet summer onions
extra virgin olive oil
coarse sea salt
Herbes d' Provence
garlic powder
3 small zucchini
1/3 to 1/2 pound soft cheese, like brie or gorgonzola
1 baked 9 - 10 inch tart crust
paprika
Preheat oven to 350 degrees. Peel onions, slice into 1/4 inch slices.
Place in single layer in cookie sheet with sides. Drizzle with olive
oil, sprinkle with salt, herbs, and garlic powder. Bake 40-50 minutes,
or until browned. Set aside. Slice the zucchini and place in microwave
safe dish, cover, and microwave on high 3 minutes. Set aside. Spread the
cheese over the bottom of the baked tart shell. Arrange onion and
zucchini over the cheese, sprinkle with paprika. Broil several minutes
to brown the top and to heat thoroughly. Slice and serve.
